Apple Crumble Pie

Apple Crumble Pie…
Who doesn’t love a delicious pie recipe?



Pie filling
5 red, very ripe apples, cored, peeled and sliced
1 tsp cinnamon
¼ tsp nutmeg
1/4 tsp all spice
1-2 tbsp flour
1-2 tsp arrowroot or cornstarch
Pinch of salt

Crumble topping
½ cup pecans, crushed or chopped small
½ cup rolled oats, instant is ok
¼-½ cup flour
1/3 cup coconut oil
2 tbsp maple syrup or organic cane sugar
1 tsp vanilla extract

Pie Crust
1 1/4 cup flour
1/8 tsp salt
1/3 cup coconut oil
3 tbsp water

1. For the pie crust, preheat the oven to 350 degrees F.
2. Combine flour and salt in a bowl. Cut in the coconut oil in with the pastry flour mixture to form crumbs. Add water, 1 tbsp at a time, until dough forms a ball.
3. Roll out dough ball on waxed paper about ¼ inch thick and wide enough to cover an 8 inch pie baking sheet. Form into the pie dish.
4. Bake in the oven for 10-15 minutes, pull out and start on the apples.
5. Prepare the apples and place into a bowl. Add the maple syrup and spices. Continue to mix. Add the pinch of salt, keep mixing and notice the juices formed from the apples. Slowly sprinkle in the flour, mix sprinkle in the second tablespoon and mix again. Sprinkle 1 tsp arrowroot over the bottom of the pie crust. Dump mixture into the prepared pie crust and sprinkle the top of the apples with 1 tsp of arrowroot.
6. Combine the butter, syrup, and vanilla in a bowl. In a ziplock bag add the pecans, close the bag and crush the pecans. Add the remaining dry ingredients and mix well, shaking the bag.
7. Slowly add the nut mixture to the butter mixture. Continue to blend and when ready crumble over the top of the apples.
8. Bake 350 F for 35-45 minutes.
