Oh my goodness – this was delicious! I had chicken and a spaghetti squash for a recipe I use often, but wasn’t quite in the mood for that recipe. It is no secret that I love my Crock-Pot(s). So in researching I combined a couple of recipes and tried this awesome recipe. I highly recommend it if you want to put a healthy spin on red Thai curry.
One of my favorite memories from childhood is waking up from a slumber party and smelling that sweet cinnamon scent drifting into my nose. I knew when I walked downstairs there would be a mound of gooey goodness also known as monkey bread waiting for my friend(s) and me. As I’ve grown older and more health conscious, my taste buds have changed. What once tasted amazing, now is a bit too strong on the sugar for me. So a few weeks ago as I prepared to have my small group over for a brunch I decided it was time to make one of my favorite dishes healthier. I can’t say it is the absolute best thing for you to eat in the morning, but I can say it is loads better than the original recipe I enjoyed as a child.
- 2 packages of premade whole wheat pizza dough (I used Trader Joe’s)
- 3 small granny smith apple’s peeled, cored, and diced
- 3 overly ripe bananas
- 1/2 Stick of butter
- 1/2 cup of brown sugar
- 1/4 cup sugar in the raw
- 2 tsps ground cinnamon
I love my crock pot. To be honest, I love all THREE of my crock pots. I used to think that was too many, but there have been multiple occasions that I have used all three at once. I have a mini, medium, and large. My large one is the one I use most often due to the size of many of my recipes. One of my favorite recipes is chili; especially this time of year.

60 years is a long time, isn’t it? I mean, seriously, that’s a long long time. I’m not even halfway there! Well, my husband’s grandparents celebrated their 60th wedding anniversary earlier this month and we had a big party to celebrate! All the family from out of town came to visit and we made table decorations and put together a little video of us all saying how much they inspire us with their commitment. It was a great weekend of celebration! One of my jobs was making the cake. I am not typically called upon for this duty as my sister-in-law actually went to culinary school and makes awesome cakes for family events, but she wasn’t arriving until the night before the party so I got the job. Of course, I didn’t mind as I’ve always dreamed of making it onto Ace of Cakes or Cake Boss or Cupcake Wars and being a super awesome cake decorator. Anyway, my job was to try and replicate the couple’s original wedding cake. This was the picture I was to make my designs from; awesome picture but when you have a white cake in front of a white dress in a black and white photo, it makes things a little difficult. I was told that it was a simple white cake with magnolia leaves around it, and that was about it. So my decorating doors were wide open it seemed.
